The coriander (Coriandrum sativum), Chinese parsley also known by the Spanish name cilantro, is an annual herbaceous plant of the Apiaceae family, the same cumin, dill, fennel and of course parsley. Coriandrum is a Latin word mentioned by Pliny (Naturalis Historia), which has its roots in the Greek word corys or korios (bug) followed by the suffix -ander (likeness), referring to the supposed similarity smell emanating from unripe fruits or plant squeezing or rubbing the leaves.
Coriander seeds are similar to those of white pepper and have a persistent aroma, with a slight spiciness and a lemony aftertaste.
It is widely used in Indian and Asian cuisine in general, it is one of the ingredients of curry, garam masala, ras el-hanout, baharat and berberè for the property that has to help the flavors of the spices to blend together.
It is used to flavor dishes of cabbage, sauerkraut, beans, fish, lamb, pork, even up to baked apples. It is ideal for scenting mushrooms and pickled vegetables.
The Coriander can be defined as one of the most suitable spices to alleviate digestive disorders and irritable bowel syndrome.
