Castroni Parsley Leaves
Parsley (Petroselinum crispum) is a biennial plant of the family Apiaceae, native to the Mediterranean areas. It grows wild in the woods and meadows of zones in temperate climate; it can not stand the intense cold.
It is an ingredient in many dishes and many sauces. It has a pungent and slightly bitter flavour that enlivens the flavour of other herbs. Parsley supports all types of cooking by boiling for frying, but is often used raw. It reinforces the taste of raw onion and goes well with garlic.
It combines well with fish and shellfish, eggs, tomatoes and cooked vegetables. It can also be added to fillings and meatballs to give a touch more to the dough.
