Castroni Red Pepper Corns
The Pink Pepper is not really a pepper, but it is the berry of a South American shrub called Schinus Molle, belonging to the Anacardiaceae family. Also called “false pepper”, its sweet and aromatic flavour with hints of anise and a slight camphor notes, leads pepper although its taste is much more delicate.
Widely used in the modern kitchen. In Brazil and Peru pink pepper is often used fresh, in berries or crushed, in sauces calls “molle”. In Europe it is easier to find the dried berries. It has a slightly spicy flavour, sweet and resinous, and it is ideal on white meat and fish. It is Excellent when used to flavour dark chocolate bars.
